Pregnant Picnic
This weekend T and I met up with an old friend for a picnic on the beach in the baking sunshine.
We enjoy picnics, and have a lovely hamper which we regularly fill with food before heading off on an adventure – and we’re super excited to be able to have a little Spud along with us soon! However, I know that deli meats and things like that aren’t particularly good during pregnancy (I think things like cooked ham or turkey from the fridge aisle of *insert your supermarket of choice here* are okay, but if anyone could give me a definite on this, I’d be grateful).
Since the humble ham sandwich is one of our go-to picnic foods, along with mini sausage-rolls, I realised I’d have to be a little more creative this time around. So, I thought I’d share with you some of the yummy, summery picnic snacks we packed for our day out.
Pasta SaladThe evening before the picnic I cooked up a buttload (accurate measurement) of pasta, sticking to wholewheat as I prefer the taste and it’s healthier. I threw in some cooked mixed vegetables, stirred in green pesto, and sprinkled with parmesan.
Easy Peasy.
Hummus and Carrot Sticks
Self-explanatory. If you need a more detailed description of this, I can’t help you. I think you’re beyond help.
Apple OatsCheck me out being organised and shit.
While my pasta was cooking, I poured a couple of cups of apple juice into a couple of cups of oats. Then, come picnic time, we spooned oats into blueberry yoghurt, and scooped it up with slices of apple. Delicious.
Banana BreadAgain, organised. Although I did plan on making this a couple of days ago and, you know, life.
I made this in the same calm and considered manner in which I do all of my baking: throw everything into a bowl and hope for the best. I’m fairly certain there are bananas in here, and probably eggs, flour, and some other stuff too… Oh, honey, yes. I put honey in there as I think it gives a lovely richness along with brown sugar (which is also an ingredient).
With picnic food recipes like this, why do I not have my own recipe book deal yet?
